Spalted wood as chopping boards/serving boards

I turn a lot of spalted wood ,especially beech ( which I sometimes spalt or increase the spalting myself )   I will rough out bowls from green ( damp rather than wet ) but mostly hollow vessels which I turn and finish in one go !!!  At the moment I have a load of Horse chestnut burr which I am spalting before I use it , I have also used Turkey oak which spalts quite attractively  , however I make almost exclusively decorative items , and would probably not use it for utility items  , as it is not as durable as sound wood  although this would depend on how advanced the spalting is !!     Terry ...
