Spalted wood as chopping boards/serving boards

Thanks every one... Seems lots of advise and information from you all.

I have more idea now what to tell customers .

I am finding that elm and apple are great species to make boards with and it they look great when finished.

Sycamore I'm not to keen on for these items

But these are only my opinion .
