When I do designs with 3, 4 or 5 sides, I often turn the whole thing as a round vessel first, then use a fine saw and a disc sander to create the sides. Yes, the blank has to be bigger, but then my fingers are rather precious to me. Plus, you get more options when it comes to the final design decision (convex vs. flat vs. concave sides, angle of the sides, etc.)
The more sides there are, the less of a problem it becomes and I have made hexagonal pieces from hex blanks.
